About this recipe

This one is a replica of Palo Santo's soup on Union Street in Park Slope, Brooklyn. Great Spot.

Ingredients

  • 4 slices Bacon
  • 1 nice big Tomato or 2-3 med ones, peeled, seeded
  • 1 med yellow Onion, diced
  • 1 Jalapeno pepper, seeded and diced
  • 1 tsp Fresh Ginger, chopped
  • 1 tsp fresh garlic
  • 3 tbsp Fresh Cilantro, chopped
  • 2 overripe Plantains, peeled and diced
  • 2 cups Good Chicken Stock

Method


1. Saute bacon in a pot until almost crispy. Set aside bacon, drain fat leaving 1 tbsp.
 
2. Add onions and plantains.Cook 10 mins.
 
3. Add ginger, garlic and jalapeno. Cook 10 mins.
 
4. Add stock to pot.Low heat. Cover for 30-45 mins.
 
5. Now, put contents of pot in blender or apply hand mixer until still a little chunky here and there.
 
6. Season to taste with salt and pepper.
 
7. Add desired quantities of beans, bacon and cilantro.
 
Serve in pre-broiled coconut.
