About this recipe
Now this soup is a really old classic and can be whipped up in a matter
of minutes. Really special on those cold winter nights when you don't
feel like stuffing your face.
Ingredients
- A lot of Duck or Chicken (or both) Homemade Stock/Broth
- An egg (natural egg! natural!)
- Some real nice bread, ciabatta, baguette...you name it.
- Parmesan
- Garlic and Butter (optional)
Method
1. Heat the broth up in a pot and let it get nice and hot. Season
with salt and pepper and taste it until its nice. If it still tastes
bland, boil it down carefully to intensify the flavor.
2. In a bowl, beat the egg and grate the parmesan cheese in there. Add some pepper.
the egg mixture right in! Don't worry, the egg will cook right in
there.
Serve with some toasted Garlic bread (you could even cheese it up) on the edge of the bowl...mmm
Real rustic!
